Photo instructions on How to use a Click and Grow Plant PodAn excellent source of vitamin C, Italian Kale provides iron, vitamin A, calcium, magnesium, potassium, protein, carbohydrates and dietary fiber. Italian kale has a deeper color and is slightly thinner and more tender than curly kale, making it more versatile. It cooks more quickly and requires less massaging for use in raw preparations. Remove the stems and use it in a salad or slice it into strips to make a slaw. We also love it stirred into soup or pasta right when it’s being finished in the pan.

Italian Kale is also known as Tuscan Kale, aka Lacinato Kale aka Dinosaur Kale. It's a fast grower that can be harvested already 35-42 days after planting!

Cooking tip: Lightly sauté or braise the mature leaves, or use the new sprouts raw in salads.

Grows best at: 64°F – 75°F

  • Please note that Italian Kale is heat sensitive and grows best at 64 to 72 °F (18 to 22°C). If the temperature is higher than 75°F (24°C) germination and growth are inhibited.
  • No need to thin out any seedlings, let them all thrive!
  • Harvest gradually Italian Kale leaves in baby leaf size in about three to four weeks after planting. Do this by picking off the larger outer leaves first - the plant will produce more from its basal growing point at the tip of the plant.
  • You may harvest the whole plant pod five to six weeks after planting. At this age, your Italian Kale has its best taste and highest nutritional value and texture.
  • If some leaves age more than two months, it may lose some of the nutritional value, signature flavor, and tender texture.
